Chin chin and puff puff are probably the two best-known Nigerian fried snacks, and people new to them often assume they are the same thing in different shapes. They are not. The dough, the texture, how long they keep and the occasions they suit are all different. Here is a plain comparison.

The dough is different

Chin chin is made from a firm, biscuit-like dough — flour, butter, sugar and often nutmeg — that is rolled out, cut into small pieces and fried. Puff puff is made from a soft, yeast-risen batter that is scooped or piped into hot oil, where it puffs up into round balls. One is rolled and cut; the other rises and is dropped.

Texture: crunchy vs soft

This is the biggest difference in the eating experience. Chin chin is crunchy all the way through — a firm, satisfying snap in every bite. Puff puff is the opposite: a thin golden outside with a soft, fluffy, slightly chewy inside, similar to a light doughnut.

How long each one keeps

Chin chin keeps well. Sealed in an airtight container in a cool, dry place, it stays crunchy for a long time, which is why it is sold in packs and given as gifts. Puff puff is at its best the day it is made — ideally still warm — and softens as it sits.
